INGREDIENTS:
› 1 sweet potato
› 1/4-1/2 avocado, depending on size
› sliced cherry tomatoes
› S&P, to taste
› red chili pepper flakes
› 1 egg, optional [poached, fried]
HOW TO MAKE:
- [to make sweet potato toasts: slice sweet potato into 1/2 inch slices, roast at 400F for ~20 minutes; may store in refrigerator until ready to toast]
- toast sweet potato slices to your liking
- mash avocado, and spoon on top of ‘toast’
- add desired seasonings + toppings
- add poached or fried egg, if using
