paleo rosemary breakfast sausage

when you go out to breakfast, the sides are always SO good but also tend to make you feel SO not great.  like bacon, sausage, potatoes, etc. they are usually kind of *really* greasy.  having breakfast sausage is actually such a solid way to get protein at the beginning of the day, and if you do it yourself, you get to choose what goes in it, how much you have, and how you feel when you eat it!

these paleo breakfast sausage patties are so easy to make with just a few seasonings, and the key player, the rosemary, all mixed in with ground pork [which you can get basically anywhere].  i formed them into small patties, but you can choose the size & shape you want yours to be when you make them!

these would be a great thing to make on a sunday as part of your food prep for the week [have you caught on? i do a lot of meal prep on sunday], because you can easily reheat them in the microwave & eat at home or on the go, or even when you get to work! they are also a smart choice after a workout to refuel, especially becuase given that they are essentially just pork [in terms of calorie/nutrient intake], they give you the protein your body craves.

so this recipe will make about 8 patties from 1 lb of ground pork.  the other things we’ll use to flavor up the breakfast sausage patties are: garlic powder, onion powder, red pepper flakes, pepper, & ROSEMARY [chopped] — which i am obviously very excited about.  rosemary may be an acquired taste for some, but it’s always a yes for me.

when you have all the goods ready to go, literally all you have to do is put the ingredients all together in a bowl & mix it up.  it’ll probably be best to mix with your hands; yes, it’s gross to touch cold raw meat, but it’s the most efficient way to mix it all together.  once mixed, i’ll split the mixture into 4 sections, and each into 2 from there, to get 8 even sizes for patties.  i take 1/8 into my hand, pat it together to squeeze out extra air bubbles, roll it between my hands into a ball [like when you form cookie dough], & pat it a little flatter so that it will be the shape you want once cooked. then you do that 7 more times, place them all on a foil or parchment-lined pan, and bake at 375 for ~20 minutes.  it’s that simple!

eat them along side some sweet potato toast [sweet or savory!] or with scrambled eggs or an omelette! power breakfast for sure »»»

› 1 lb ground pork

› 2 tbsp fresh rosemary, chopped

› 1 tsp garlic powder

› 1 tsp onion powder

› 1/2 to 1 tsp red pepper flakes [how much of a kick do you like?]

› ground pepper, to taste

 

HOW TO MAKE»
  • set oven to 375F.
  • place all ingredients in a bowl.
  • mix the ingredients, best done with your hands.
  •  once mixed, split the mixture into 4 sections, & each into 2 from there, to get 8 even sizes for patties.
  • take 1/8 into your hand, pat it together to squeeze out extra air bubbles, roll it between your hands into a ball [like when you form cookie dough], & pat it a little flatter so that it will be the shape you want once cooked.
  • do that for each patty.
  • place them all on a foil or parchment-lined pan,
  • bake at 375 for ~20 minutes.
